Berggarten Sage (Salvia officinalis ‘Berggarten’) is a premium culinary herb prized for its exceptionally large, soft silver-green leaves, strong aromatic flavour, and compact, upright habit. This German selection is considered one of the finest culinary sages due to its broad, velvety foliage and excellent flavour, making it a favourite for roasting meats, poultry, stuffing, sausages, sauces, soups, roasted vegetables, herb butter, and savoury breads.

Unlike many common sages, Berggarten produces fewer flowers, allowing the plant to devote more energy to producing abundant, high-quality foliage. Its attractive silvery leaves create year-round ornamental interest and pair beautifully with lavender, rosemary, thyme, and other Mediterranean herbs. If flowers do appear in early summer, the lavender-blue blooms attract bees, butterflies, and other beneficial pollinators.

This compact, shrubby perennial thrives in sunny, well-drained locations and becomes increasingly drought tolerant as it matures. Sun Requirements ▾

Full sun. Plant in a location receiving at least 6–8 hours of direct sunlight daily. Full sun encourages dense growth, abundant aromatic foliage, and the best flavour.

Watering Instructions ▾

Low to Moderate. Water regularly during establishment. Once established, allow the soil to dry slightly between waterings. Avoid overwatering, as sage prefers drier conditions and is susceptible to root rot in poorly drained soil.

Care Tips ▾

Harvest stems regularly to encourage dense, bushy growth. Prune lightly in early spring to remove winter damage and shape the plant, avoiding heavy pruning into old woody stems. Excellent drainage is essential for long-term health, especially during winter. A moisture meter is a great way to gauge your plant's moisture levels.
