Garlic Chives (Allium tuberosum)

Garlic Chives (Allium tuberosum)

Garl

Garlic Chives (Allium tuberosum) are a hardy perennial culinary herb prized for their flat, dark green leaves and mild garlic flavour. Unlike common chives, which have a mild onion taste, Garlic Chives combine the fresh texture of chives with a delicate garlic flavour, making them an incredibly versatile ingredient in the kitchen. The leaves are delicious chopped fresh into stir-fries, soups, salads, egg dishes, noodles, dumplings, compound butters, marinades, and savoury baked goods.

In late summer, elegant clusters of star-shaped white flowers rise above the foliage, adding ornamental beauty while attracting bees, butterflies, and other beneficial pollinators. The edible flowers can also be used as an attractive garnish for salads and other dishes. The upright clumps of foliage remain neat and productive throughout the growing season, providing repeated harvests for years once established.

Garlic Chives thrive in full sun and adapt well to a variety of growing conditions, making them an excellent addition to herb gardens, vegetable gardens, raised beds, edible landscapes, and decorative containers. Regular harvesting encourages fresh new growth and keeps plants compact and productive.

In Alberta, Garlic Chives are exceptionally hardy and return reliably each spring, providing years of fresh harvests with minimal maintenance.

Sun Requirements ▾

Full sun to part shade. Plant in a location receiving at least 6 hours of direct sunlight daily for the highest leaf production and strongest flavour. Light afternoon shade is tolerated in hotter locations.

Watering Instructions ▾

Moderate. Keep the soil evenly moist during establishment. Once established, Garlic Chives tolerate short dry periods but produce the best foliage with consistent moisture and well-drained soil.

Care Tips ▾

Harvest leaves regularly by cutting them near the base of the plant to encourage fresh new growth. Remove spent flower heads if self-seeding is not desired, or leave them in place to support pollinators. Divide mature clumps every three to four years in spring or fall to maintain vigour. A moisture meter is a great way to gauge your plant's moisture levels.
