Early White Vienna Kohlrabi (Brassica oleracea var. gongylodes ‘Early White Vienna’)

Early White Vienna Kohlrabi (Brassica oleracea var. gongylodes ‘Early White Vienna’)

Early White Vienna Kohlrabi (Brassica oleracea var. gongylodes ‘Early White Vienna’) is a classic heirloom vegetable prized for its tender texture, mild sweet flavour, and reliable performance in cool-season gardens. This long-standing favourite produces attractive pale green to creamy-white bulbous stems above the soil surface, offering a unique and versatile harvest for home gardeners.

The crisp, juicy bulbs develop a flavour often described as a blend of cabbage, broccoli stems, and mild turnip with a pleasant sweetness. Harvested when young, the bulbs remain tender and nearly fibre-free, making them excellent for fresh salads, vegetable platters, slaws, roasting, steaming, stir-fries, and soups. The nutritious leaves are also edible and can be prepared similarly to kale or collard greens.

Early White Vienna is known for its quick maturity and dependable yields. Its compact size makes it ideal for smaller gardens, raised beds, and succession planting throughout the growing season. As a cool-season crop, it performs best during spring and fall weather, producing the highest-quality bulbs when temperatures remain moderate.

In Alberta, Early White Vienna Kohlrabi grows exceptionally well and provides reliable harvests throughout the cooler portions of the gardening season.

Sun Requirements ▾

Full sun is ideal for vigorous growth and high-quality bulb development. Plant in a location that receives at least 6–8 hours of direct sunlight daily. Bright sunlight promotes rapid growth, larger harvests, and sweeter, more tender bulbs. Light afternoon shade can be beneficial during periods of unusually hot weather.

Watering Instructions ▾

Moderate. Maintain consistently moist soil during growth to encourage rapid development and prevent tough or woody bulbs. Avoid allowing the soil to dry out completely.

Care Tips ▾

Harvest bulbs when they reach approximately 5–8 cm (2–3 inches) in diameter for the sweetest flavour and most tender texture. Larger bulbs may become woody if left too long before harvesting.
